Winemaker's Tasting Notes
The unique soils in the Jasper block of our estate’s Fault Line Vineyards provided gorgeous, perfectly ripe Dolcetto fruit in 2006. After hand-harvesting in mid-October we fermented the whole, intact berries and aged the resulting elixir in neutral oak casks until bottling.
The result is a wine of remarkable depth and concentration in which the vivid berries, plums, and cherries are unencumbered by oak aromas or flavors. With a finely detailed structure and delicate balance we anticipate this wine will improve over the next three years.
We suggest pairing this Dolcetto with simple, elegant cuisine such as spinach- and ricotta-stuffed ziti with white truffles, prosciutto and brown-butter.
